I attempted Global Game Jam Next back in 2018ish and it was during summer so none of the students wanted to participate. However, prior to covid I had run several jams (analog and digital) either at my school site or at a local university with their game design students. All it took was someone at the university department level willing to act as a point person; the university event coordination staff end up doing most of the logistical work. Unfortunately most of my contacts that helped facilitate the events have moved on to greener pastures so it has been awhile since I've done a jam, but I want to get back into it.

Do your students compete/enter any public Game Jams? Things like GGJ Next or Global Game Jam?
Looking at things for students to do.
